This meal was by far my sons favorite! Which totally surprised me! He loves fish sticks so I thought this would be the perfect time to try an unbreaded fish recipe. He loved it! I also loved it and my picky eater husband tolerated it, sometimes that’s as good as you are going to get!
I tried to have around 5 food items for each color including a meat, starch, fruit, veggie and dairy item (we are dairy farmers you know!). For this post the dairy came in the form of butter on the corn and roll. My son also ate a cheese stick for dinner but was more white than yellow so we didn’t photograph it. The spaghetti squash was a fun one to make with kids. We cut it in half, scooped it out, drizzled some melted butter salt and pepper on it and cooked it at 350 degrees until it was done. Then forked/shredded it to make it look like spaghetti. We had sweet corn in the freezer from last summer, a favorite at our house! We rounded out the meal with a banana and our favorite rolls.
