Ham, Potato and Cheddar Quiche

  • 9-inch pie crust
  • 1 cup potato, boiled and diced
  • 1 cup cooked ham, diced
  • 2 teaspoons oil
  • 5 Medium size eggs beaten (4 Large)
  • ½ cup half-and-half
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1 - ¼ cups shredded Cheddar cheese
  1. Preheat oven to 400 degrees.
  2. Pierce the sides and bottom of pie crust with a fork.
  3. Bake crust for 5 minutes.
  4. Remove from oven and set aside.
  5. In a large skillet over medium-high heat, cook potato and ham in oil for 5 to 10 minutes, until golden.
  6. Remove from heat and let cool.
  7. Transfer potato mixture to pie crust.
  8. In a bowl, whisk together eggs, half-and-half and seasonings.
  9. Pour egg mixture over potato mixture in crust.
  10. Sprinkle with cheese.
  11. Bake, uncovered, at 350 degrees for 45-50 minutes.
  12. If edges of crust brown too quickly, cover with strips of aluminum foil.
  13. Cut into wedges and serve warm.
