Zucchini Bread

A moist and delicious Zucchini Bread recipe that is made with cinnamon, nutmeg and walnuts. This recipes freezes well and is an easy to make.

Ingredients

  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 cup Oil
  • 1 Tablespoon Vanilla
  • 3 Eggs
  • 3 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 tsp Baking Powder
  • 1/2 cup Nuts (optional)
  • 3 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 2 cups Zucchini

Instructions

  • Preheat oven to 350 degrees.
  • Blend the sugar, brown sugar and oil.
  • Add the vanilla and eggs until blended.
  • Add the dry ingredients; flour, baking soda, baking powder, salt, cinnamon, nutmeg and stir.
  • Add the zucchini and walnuts; stir together.
  • Bake in a large greased bread pan for 45 minutes or until a tooth pick inserted in middle comes out clean. Cooking time will very depending on loaf pan size.
