Ingredients

lb.
raw chicken
diced
1
15 oz can crushed tomatoes
1
10 oz, can enchilada sauce
1
medium onion
chopped
1
4 oz can diced green chile peppers
2
cloves
of garlic
minced
1
14 oz. can chicken broth
1
15.25 oz can whole kernel sweet corn
1
15.25 oz can black beans
1
teaspoon
cumin
1
teaspoon
salt
1/4
teaspoon
pepper
Garnish - crushed tortilla chips or strips
sour cream and shredded cheese
Instructions
Place chicken, tomatoes, enchilada sauce, onion green chilies and garlic in a
5 or 6 quart slow cooker.
Pour in chicken broth and season with cumin, salt and pepper.
Stir in corn and black beans.
Cover and cook on low setting for 6 - 8 hours or on high for 3 - 4 hours.
Garnish with crushed tortilla chips or tortilla strips, sour cream, shredded cheese and chopped cilantro (optional).
