Crock Pot Chicken Tortilla Soup

Ingredients

  • 1 lb. raw chicken diced
  • 1 15 oz can crushed tomatoes
  • 1 10 oz, can enchilada sauce
  • 1 medium onion chopped
  • 1 4 oz can diced green chile peppers
  • 2 cloves of garlic minced
  • 1 14 oz. can chicken broth
  • 1 15.25 oz can whole kernel sweet corn
  • 1 15.25 oz can black beans
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnish - crushed tortilla chips or strips sour cream and shredded cheese

Instructions

  • Place chicken, tomatoes, enchilada sauce, onion green chilies and garlic in a 5 or 6 quart slow cooker.
  • Pour in chicken broth and season with cumin, salt and pepper.
  • Stir in corn and black beans.
  • Cover and cook on low setting for 6 - 8 hours or on high for 3 - 4 hours.
  • Garnish with crushed tortilla chips or tortilla strips, sour cream, shredded cheese and chopped cilantro (optional).
