Overnight Baked Oatmeal With Dried Fruit and Nuts

This Overnight Baked Oatmeal with Dried Fruit and Nuts is a healthy breakfast recipe the whole family will love! Rolled oats, dried cranberries, dried apricots, dried cherries, raisins and pecans pack this oatmeal with lots of flavor!

Ingredients

  • 5 cups Rolled Oats
  • 1 cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 Tablespoon Baking Powder
  • 3/4 tsp Salt
  • 3 cups Milk
  • 6 Eggs
  • 4 oz Melted Butter
  • 1 Tablespoon Vanilla Extract
  • 1/3 cup Dried Cranberries
  • 1/3 cup Dried Cherries
  • 1/3 cup Dried Diced Apricot
  • 1/3 cup Raisins
  • 1/3 cup Pecan Pieces

Instructions

  • The night before: In a large bowl, mix oats, brown sugar, cinnamon, baking powder and salt.
  • Beat in eggs, milk, melted butter and vanilla.
  • Stir in dried fruit and nuts.
  • Pour in 9 x 13 ' buttered baking dish until ready to bake.
  • The morning of: Preheat oven to 325 degrees.
  • Bake in pre-heated oven for 45 mins or until mixture is firm
  • Serve with warm milk.

Notes

Do I need to use Rolled Oats? Yes, this recipe works best with rolled oats since it will sit overnight. 
Can I make this oatmeal without the nuts? Yes, you can. The nuts are optional or can be changed out for any other nut. 
Can I substitute different dried fruit? Yes, just use a total of 1 and 2/3 cup of total dried fruit whatever is your pleasure.
