This Overnight Baked Oatmeal with Dried Fruit and Nuts is a healthy breakfast recipe the whole family will love! Rolled oats, dried cranberries, dried apricots, dried cherries, raisins and pecans pack this oatmeal with lots of flavor!
The night before: In a large bowl, mix oats, brown sugar, cinnamon, baking powder and salt.
Beat in eggs, milk, melted butter and vanilla.
Stir in dried fruit and nuts.
Pour in 9 x 13 ' buttered baking dish until ready to bake.
The morning of: Preheat oven to 325 degrees.
Bake in pre-heated oven for 45 mins or until mixture is firm
Serve with warm milk.

Do I need to use Rolled Oats? Yes, this recipe works best with rolled oats since it will sit overnight. Can I make this oatmeal without the nuts? Yes, you can. The nuts are optional or can be changed out for any other nut. Can I substitute different dried fruit? Yes, just use a total of 1 and 2/3 cup of total dried fruit whatever is your pleasure.
