This recipe comes from my sister-in-law. She gifted it to me at my bridal shower.
We eat soup all year round! This recipe is perfect to use up your veggies from the garden in the summer and makes a light meal at the start of the year when we are all focused on getting more veggies in our diet.
WHAT YOU WILL NEED
INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST)
- Italian Sausage – If you buy the Bob Evans brand it will be the green package.
- Green pepper
- Garlic
- Yellow squash
- Zucchini
- Carrots
- Canned diced tomatoes – I use the petite diced.
- Oregano – I use dried.
- Basil – also use dried.
- Cheese Tortellini – I usually use frozen but refrigerated would work great too!
- Beef Broth
HOW TO MAKE TORTELLINI SOUP
- In a large pot brown the sausage; drain.
- Add the green pepper and garlic and simmer for 2 minutes.
- Add the broth, tomatoes, diced veggies and spices to the pot; simmer until veggies are tender. About 10 minutes.
- Add the tortellini and cook for 3 minutes.

- 1 Green pepper chopped
- 2 cloves Garlic minced
- 1 Yellow Squash chopped
- 1 Zucchini chopped
- 1 cup Carrots chopped
- 1 (28 oz) can Diced tomatoes
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 (20 oz) package Cheese tortellini
- 2 (32 oz) cartoons Beef broth
Instructions
- In a large pot brown the sausage; drain.
- Add the green pepper and garlic and simmer for 2 minutes.
