I love bananas.
My husband loves bananas.
We almost always have bananas in the house.
So, here is my new favorite recipe to make when this happens.
Cocoa Bottom Banana Pecan Bars:
1 cup sugar
1/2 cup (1 stick) butter, softened
5 ripe bananas, mashed
1 egg
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped pecans
1/4 cup unsweetened cocoa powder
Preheat oven to 350. Grease 9×13 inch baking pan. Beat sugar and butter in bowl at medium until creamy. Add bananas, egg and vanilla; beat until well blended. Combine flour, baking powder, baking soda and salt in medium bowl. Add flour mixture to banana mixture; beat until well blended. Stir in pecans.
Divide batter in half. Stir cocoa into the one half. Spread chocolate batter into prepared pan. Top with plain batter; swirl with knife.
Bake 30 to 35 minutes or until edges are lightly browned. cool completely in pan on wire wrack. Cut into bars.
