Hamburger Soup is a quick and easy meal idea packed with vegetables, ground beef, beef broth and tomato juice. Hamburger Soup uses ingredients you probably already have at home and it freezes well!
I love soup, especially on cold days when my crew needs warmed up from working on the farm. It’s usually easy to make and I almost always have the ingredients on hand which is a bonus for a busy mom and farmwife!

This recipe is easy to make and ingredients can be left out or substituted based on preferences. Start by cooking the ground beef and then sauteing the onions, garlic and tomatoes. Add remaining ingredients and it will be ready in no time!
Soup is an easy way to hide veggies for your picky eaters. I would recommend microwaving the vegetables and then putting them in a blender to puree. Then add the pureed mixture to the remaining ingredients. You can also do this with beans in chili and soup.
I love to serve soup with grilled cheese sandwiches, they are always a hit with the boys. We love to dunk them in our soup like you would dunk an Oreo in milk. Doesn’t get much better!

Hamburger Soup
Ingredients
- 1 lb ground beef browned and drained.
- 1 small onion diced
- 1 teaspoon minced garlic
- 1 14 oz can Italian style tomatoes
- 1 46 oz can tomato juice
- 2 14 oz cans beef broth
- 1 12 oz. bag of mixed frozen vegetables
- 2 potatoes peeled and diced
- 1 teaspoon season salt
- 1 teaspoon Worcestershire sauce
- pepper to taste
Instructions
- Cook ground beef until no longer pink; drain.
- Add onion, garlic and tomatoes and saute for 5 mins.
- Add remaining ingredients and cook for 15-20 minutes or until potatoes are tender.

What can replace the Italian tomatoes? Don’t have any of that.
You can replace with regular diced tomatoes.
Just confirming we use 46 ounces of tomato juice correct? it Says a 46ounce can of tomato juice but that would be a big can so just double checking 🙂

This is a great go to for quick meal! Great on snowy chilly days! I use Tomato Soup instead of juice, I also add rosemary basil and thyme seasoning! I make This different every time as I like to be creative with seasonings! My family loves when I make this!
I like this soup. My mom always used whatever veggies she had on hand the day she made it (corn, potatoes, carrots, peas, celery, greanbeans). So it was always a little different. I liked it best when she added elbow macaroni noodles instead of potatoes.
V-8 juice is a good idea. I use V-8 spicy hot juice for a little extra kick.
My grandkids kids like this better using V-8 Juice instead of the tomato juice. It’s not quite so tangy. I also add a tablespoon or so brown sugar to the broth. It’s great with chili powder, a little Italian seasoning added and using tortellini instead of potatoes. Again, the kids like it better, AND the tortellini freezes much better than the potatoes. It’s SO good!!!
I made this soup and absolutely loved it, however my kids did not like the broth. Tomato juice maybe adds that tang to it… any suggestions to kid friendly the flavor. I can follow a recipe but to spruce it up I have no clue what spices do what! 🙁

I learned how to make this over 35 years ago. It was a staple on the menu for us in Southeast Texas. I make servile different ways due to my cravings or wife’s craving. We both love making this go to soup when all else fails. Adding Chili Powder is something my wife likes to do. Love it. Yum!

I recommend cooking the hamburger first before putting it in the crockpot. Other crockpot soup recipes that I have made use cooked hamburger.

I’ve done it and any ground meat works fine. My favorite is with ground pork
Works great with sausage of any type…..if links, cut the sleeve and pop it out before cooking. I made some with leftover cooked venison and OH-MY-GOODNESS!!! WOW!!!

How would you go about freezing this with the potatoes? Should I leave them out or just half-cook them?
I would do everything the same but I wouldn’t cook it for the 15-20 mins part, instead I would but in freezer container and freeze. Enjoy!
My mom made a similar soup as this and I have carried on the tradition for over 40’ ish years! I have an annual Soup-er party every year just before Christmas when everyone is harassed, stressed and after shopping just needs a warm meal. It’s relaxed, come when and as your are. Needless to say my soup is “ famous!”
About the potatoes- I make this in a huge pot and normally for my family I freeze half. I do take the potatoes OUT before I freeze. They don’t freeze well! They can always be added later. Enjoy!

My mother made this and it’s awesome and she always made sure it had Lina beans and corn as well as carrots s as bd green beans! It was so great on a cold winter night!
It is really good with green chilies and Rotel tomatoes and I also poke some holes in fresh jalapeños and drop them in there.
This version has my husband written all over it he loves spicier food!
