Pumpkin Chocolate Chip Muffins

I think I need an intervention!

No seriously, I saw the new USDA recommendations on what we should eat.. no where on the new plate did I see pumpkin chocolate chip muffins….

But that hasn’t stopped me!!

It all started a while back when a group of my bloggy pals and I had what we called a Freeze-A-Rama. We all made a bunch of freezer meals and then swapped, so we went home with a bunch of different meals! It was a lot of fun! Gal in the Middle and her sister Fruaglista Farm Life made something I had never had nor every thought about having… pumpkin chocolate chip muffins!

Needless to say those muffins never made it to the freezer and I knew there was a reason I hadn’t made them since!! Until now!!

I don’t know about you but when it comes to recipes off the Internet I normally just bring my laptop to the kitchen!

Start by mixing the eggs and sugar

Add the pumpkin and oil

Mix

Add the dry ingredients, I always add flour last and mix until blended.  

Fold in your chocolate chips
I always use a scoop to help me fill the muffin tins.

Yummy in my tummy!!

Pumpkin Chocolate Chip Muffins
2 eggs
1 cup sugar
8 oz. canned pumpkin
3/4 cup oil
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup chocolate chips

Preheat oven to 400 degrees F. (I usually bake at a lower temperature than the recipe says so 375 for me!). Bake for 15-20 minutes or until done.

Made this with a few minor changes – added nutmeg, used whole-wheat flour and brown sugar instead of white, and added walnuts and sunflower seeds instead of the chocolate chips, and used fresh pumpkin I microwaved and mashed instead of canned. Needed around 30 minutes of baking. It turned out amazing, one of the best muffin recipes I ever made. Thank you!

  4. Ok, I have heard way too much about these muffins to NOT try them. GAME ON! I can’t believe I’m saying this, but it might be nice to turn on the oven and get some heat going in the house! DADGUM INDIANA WEATHER? Not complaining about the cooler temps, just trying not to catch a cold from all the swings in temp and pollen!
