Zucchini bread has always been one of my favorites. I remember making it with my mom growing up. We had a big garden and in the summer we would have more zucchini than we knew what to do with. The whole house would fill with the smell of cinnamon and nutmeg, yum!

WHAT YOU WILL NEED
EQUIPMENT NEEDED: FOOD PROCESSOR
I use a food processor to grate the zucchini for this recipe. But you could also use a box grater or blender. The smaller the grate the better so you don’t notice the chunks of zucchini in the recipe.

- Sugar
- Brown Sugar
- Oil
- Vanilla
- Eggs
- Flour
- Baking Soda
- Salt
- Baking Powder
- Walnuts
- Cinnamon
- Nutmeg
- Grated Zucchini
HOW TO MAKE ZUCCHINI BREAD
- Preheat oven to 350 degrees.
- Blend the sugar, brown sugar and oil.
- Add the vanilla and eggs until blended.
- Add the dry ingredients; flour, baking soda, baking powder, salt, cinnamon, nutmeg and stir.
- Add the zucchini and walnuts; stir together.
- Bake in a large greased bread pan for 45 minutes or until a tooth pick inserted in middle comes out clean. Cooking time will very depending on loaf pan size.

Can you freeze zucchini bread? Yes, you can. Wrap in plastic wrap or foil and place in a freezer ziploc style bag. Make sure to label the bag with the date and the bread will be good for up to 6 months.
Can you freeze grated zucchini? Yes, I do it every summer. Just be sure to remove as much of the liquid before adding the zucchini to the Ziploc bag.
Do you need to peel the zucchini for zucchini bread? You do not need to but if you have picky eaters you can remove the peel so the green color is not visible.
Can you add Chocolate Chips? Yes, I love zucchini bread with chocolate! You can add 1 – 2 cups of chocolate chips depending on how much chocolate you want to add.
Can I make it in a smaller loaf pan or muffing pan? Yes, but the bake time will very so make sure to check often and remove when tooth pick comes out of the center clean.

I am in the same boat as you, Liz. I planted a small container garden. It is OK and I am learning a lot. I don’t have the gardening touch that I remember having as a kid. Growing up we had a huge garden and it was so fun to work in it with my Mom. I am guessing Mom is the true green thumb and I a good helper.
